Our senses rely on memory and past experience (Cardello, 1996). Cognitive processes occur whereby our senses react to stimuli and allow us to build up a picture of what lays before us (Raats et al., 1995). All the senses are involved in food choice, with Raats et al. (1995), stating that sight and smell are the most important. With this in mind it is easy to come to a decision on whether or not to eat a cooked food item placed in front of us. From previous experience people can build up an idea of how a food item will taste before it even enters the mouth. The relative degree of spiciness and, indeed suitability to the palette, can be “calculated” from the smell and the sight of a dish (Cardello 1996).
